Blown sugar recipe using cream of tartar. The sugar pan must be immaculately scrubbed clean before cooking.

Blown Sugar - Cream of Tartar Recipe

Ingredients
  • 2 lbs. 6 oz. sugar 
  • 14 oz. water  
  • 10 oz. glucose
  • 2g cream of tartar
Procedure
  1. Bring sugar, water and glucose to 145 degrees C. Add acid, continue to 160 degrees C to 162 degrees C.
  2. Pull 40 times, 40% humidity maximum.
