Traditional sponge cake recipe with melted butter.

Traditional Sponge Cake - Large Batch

Ingredients
  • 6 lbs. 12 oz. eggs
  • 4 1/2 lbs. sugar
  • 4 1/2 lbs. cake flour
  • 1 1/2 pounds butter, melted
  • 1 1/2 oz. vanilla
Procedure
  1. Melt sugar with eggs over hot water bath. Transfer to large mixer and whip high until very light. Fold in flour, last butter and vanilla.
  2. Bake cakes at 350 degrees F.
